It’s hard to find a nice, creamy soup when you are vegan or dairy-free. This recipe is a fantastic, creamy, cauliflower and turmeric soup that is great for warming you up on a cold day.
Ingredients:
- 1 tbsp of olive oil
- ½ white onion, chopped
- 2 cloves of garlic, chopped
- 1 small head of cauliflower, chopped into little pieces
- Pinch of cayenne pepper
- 1 tbsp of turmeric
- 4 cups of unsweetened coconut milk
- 1 tsp of salt
- 1 tbsp of lemon juice
- Black pepper
- In a large soup pot, saute olive oil, onion, garlic, cauliflower, cayenne, and turmeric over medium heat for 10 mins.
- Reduce heat and add salt and half of the coconut milk. Simmer for 10 mins.
- Transfer the soup to a blender and blend until creamy.
- Return the blended soup to the pot. Over medium heat, gradually add the rest of the coconut milk. Let simmer for 3-5 mins.
- Add lemon juice and pepper.
