It’s hard to find a nice, creamy soup when you are vegan or dairy-free. This recipe is a fantastic, creamy, cauliflower and turmeric soup that is great for warming you up on a cold day.

Ingredients:

  • 1 tbsp of olive oil
  • ½ white onion, chopped
  • 2 cloves of garlic, chopped
  • 1 small head of cauliflower, chopped into little pieces
  • Pinch of cayenne pepper
  • 1 tbsp of turmeric
  • 4 cups of unsweetened coconut milk
  • 1 tsp of salt
  • 1 tbsp of lemon juice
  • Black pepper
  1. In a large soup pot, saute olive oil, onion, garlic, cauliflower, cayenne, and turmeric over medium heat for 10 mins.
  2. Reduce heat and add salt and half of the coconut milk. Simmer for 10 mins.
  3. Transfer the soup to a blender and blend until creamy.
  4. Return the blended soup to the pot. Over medium heat, gradually add the rest of the coconut milk. Let simmer for 3-5 mins.
  5. Add lemon juice and pepper.
