Chocolate chip cookies are an amazing and delicious treat. Most of the time they contain milk, eggs, and chocolate chips and if you are trying to eat a plant-based, or vegan diet, it is difficult to enjoy these yummy treats. Here is a super yummy, vegan, chocolate chip cookie recipe made with chickpeas, peanut butter, and maple syrup!
Ingredients:
1½ cups of cooked chickpeas
½ cup of natural peanut butter
⅓ cup of maple syrup
2 tsp of vanilla extract
½ tsp of baking soda
½ cup of vegan chocolate chips
Pinch of salt
- Preheat oven to 350F and line a baking sheet with parchment paper.
- Blend the chickpeas, peanut butter, maple syrup, vanilla extract, baking soda & salt together in a blender until smooth.
- Fold the chocolate chips into the blended mixture.
- Roll the dough into equal size balls and place them on the baking sheet.
- Bake for 20 minutes or until they are golden brown.
