Ingredients:

 

  • 1 sweet potato
  • 1 can of chickpeas
  • olive oil
  • cumin
  • turmeric
  • garlic powder
  • salt and pepper
  • romaine lettuce
  • caesar dressing
  • tortillas

 

  1. Preheat the oven to 400F
  2. Cut the sweet potato into small cubes and place on a baking sheet
  3. Drain and rinse the chickpeas and pour them onto the baking sheet with the sweet potatoes.
  4. Toss the sweet potato with 1 tbsp olive oil, ½ tsp cumin, ¼ tsp turmeric,  ½ tsp garlic powder and season with salt and pepper.
  5. Toss the chickpeas with 1 tbsp olive oil, ½ tsp cumin, ¼ tsp turmeric, ½ tsp garlic powder and season with salt and pepper.
  6. Bake for 35 minutes until both the sweet potatoes and chickpeas are golden brown.
  7. Roughly chop the romaine lettuce, place in a bowl with the sweet potatoes and chickpeas, and toss with the caesar dressing.
  8. Wrap the mixture in tortillas and enjoy!
