Indian style food has some great vegetarian dishes. This is a super simple recipe that I make all the time. It is a vegetarian version of Tikka Masala.

 

Ingredients:

 

  • Chickpeas
  • Cauliflower
  • Mini Potatoes
  • Tikka Masala Sauce
  • Salt
  • Pepper
  • Garlic Powder/Garlic Salt
  • Olive Oil

Recipe:

 

Preheat the oven to 450 degrees.

 

Step 1:

– Drain a can of chickpeas and rinse them.

– Cut half a head of cauliflower into little pieces.

– Rinse a couple of handfuls of mini potatoes and cut them in half.

Step 2:

– Spread the cauliflower, chickpeas, and potatoes out on a cookie sheet lined with tin foil, drizzle with olive oil, and sprinkle with salt, pepper, and garlic powder.

Step 3:

– Bake in the oven for 25 minutes, flipping after 15 minutes.

 

Step 4:

– Pour a jar of Tikka Masala sauce into a sauce pan and heat it on low, stirring every couple of minutes.

Step 5:

– When the vegetables in the oven are fully cooked, mix them together with the sauce and serve.
