Chocolate chip cookies are an amazing and delicious treat. Most of the time they contain milk, eggs, and chocolate chips and if you are trying to eat a plant-based, or vegan diet, it is difficult to enjoy these yummy treats. Here is a super yummy, vegan, chocolate chip cookie recipe made with chickpeas, peanut butter, and maple syrup!

Ingredients:

1½ cups of cooked chickpeas

½ cup of natural peanut butter

⅓ cup of maple syrup

2 tsp of vanilla extract

½ tsp of baking soda

½ cup of vegan chocolate chips

Pinch of salt

  1. Preheat oven to 350F and line a baking sheet with parchment paper.
  1. Blend the chickpeas, peanut butter, maple syrup, vanilla extract, baking soda & salt together in a blender until smooth.
  1. Fold the chocolate chips into the blended mixture.
  1. Roll the dough into equal size balls and place them on the baking sheet.
  1. Bake for 20 minutes or until they are golden brown.
