Ingredients:
- 1 sweet potato
- 1 can of chickpeas
- olive oil
- cumin
- turmeric
- garlic powder
- salt and pepper
- romaine lettuce
- caesar dressing
- tortillas
- Preheat the oven to 400F
- Cut the sweet potato into small cubes and place on a baking sheet
- Drain and rinse the chickpeas and pour them onto the baking sheet with the sweet potatoes.
- Toss the sweet potato with 1 tbsp olive oil, ½ tsp cumin, ¼ tsp turmeric, ½ tsp garlic powder and season with salt and pepper.
- Toss the chickpeas with 1 tbsp olive oil, ½ tsp cumin, ¼ tsp turmeric, ½ tsp garlic powder and season with salt and pepper.
- Bake for 35 minutes until both the sweet potatoes and chickpeas are golden brown.
- Roughly chop the romaine lettuce, place in a bowl with the sweet potatoes and chickpeas, and toss with the caesar dressing.
- Wrap the mixture in tortillas and enjoy!
